In a 2 quart glass measure, stir together sugar and corn syrup until blended.
Microwave, uncovered, on HIGH (100%) for 7 minutes, stirring after 3 minutes.
Stir in salt, butter, peanuts, and vanilla.
Microwave, uncovered, on HIGH (100%) for 5 to 6 minutes or until candy forms hard threads when dropped into a cup of cold water (or reaches hard crack stage â€” 300Â° on a candy thermometer).
Beat in baking soda (mixture will be bubbly and turn light tan).
Immediately pour mixture onto prepared baking sheet and with a spatula, quickly spread out as thinly as possible.
For even thinner brittle, let mixture cool on baking sheet for 5 to 10 minutes (candy should be pliable).
Lift candy slightly off baking sheet and stretch to desired thinness.
Let cool for atleast 1 hour.
Break into pieces and store in an airtight container.
