Peanut-Banana Pudding Recipe

2 egg yolks, beaten
1/3 cup sugar
3 tablespoons cornstarch
2 cups skim milk
2 tablespoons creamy peanut butter
1 teaspoon vanilla extract
2 medium bananas, thinly sliced
Directions
Combine egg yolks, sugar, cornstarch, and milk in a medium saucepan.
Cook over medium heat, stirring constantly, until mixture boils.
Cook an additional 1 minute, stirring constantly.
Remove saucepan from heat; add peanut butter and vanilla.
Stir well; cover and chill thoroughly.
Layer half of bananas in 6 individual dessert dishes.
Spoon half of pudding over bananas in each dish.
Repeat layers, ending with pudding.
Chill thoroughly.
