Peanut Sauce Recipe

Ingredients
4 tablespoons minced shallots
1/2 teaspoon minced garlic
2 tablespoons vegetable oil
2 cups unsalted roasted peanuts, hulled
4 teaspoons light brown sugar, loosely packed
1 tablespoon fresh lime juice
1 teaspoon or more finely chopped hot chilies, to taste; or Tabasco sauce, to taste
1 1/2 cups water
Directions
Saute the shallots and garlic in the oil 2 to 3 minutes to soften.
When softened, scrape shallots, garlic, and oil into a blender or food processor and add all other ingredients.
Puree or process until sauce is fairly smooth.
Pour sauce back into the frying pan and cook over a low heat, stirring constantly, about 5 to 6 minutes, long enough to blend flavors and thicken the sauce.
