Peanut Pork Satay Recipe

Ingredients
| Boneless pork | 2 Pound | |
| 1/4 cup fruit chutney | ||
| Soy sauce | 1/4 Cup (16 tbs) | |
| Peanut butter | 2 Tablespoon | |
| 1 tbsp grated fresh ginger root | ||
| Garlic | 2 Clove (5gm) | |
| Onion | 1 , quartered | |
| Juice of 1 lime | ||
| Salted peanuts | 1 Cup (16 tbs), finely chopped | |
Directions
1. Place pork cubes in glass bowl or heavy plastic bag.
2. In a food processor or blender, combine chutney, soy sauce, peanut butter, ginger root, garlic, onion and lime juice. Process until smooth. Pour over pork cubes. Toss to coat with sauce. Cover and marinate overnight in refrigerator.
3. Thread pork cubes on 12 skewers. Grill over medium coals on barbecue, or broil under broiler about 4 inches (10 cm) from heat for 20 to 25 minutes, or until meat is no longer pink.
4. Roll skewers of meat in chopped peanuts and serve.
