Ingredients

 
1 cup Vegetable Juice
 
1/2 cup chopped green onions
 
1/2 cup chopped sweet red pepper
 
1/3 cup creamy peanut butter
 
1 clove garlic, minced
 
1 tablespoon soy sauce
 
1/2 teaspoon grated fresh ginger
 
Dash crushed red pepper
 
8 ounces spaghetti, cooked and drained
 
Chopped unsalted peanuts for garnish

Directions

In 1-quart saucepan, combine juice, green onions, sweet red pepper, peanut butter, garlic, soy sauce, ginger and crushed red pepper.
Over medium heat, heat until hot and smooth, stirring often.
In large bowl, combine spaghetti and mixture; toss to coat well.
Garnish with peanuts.
