Peanut Date Balls Recipe
Ingredients
| 1 - 8 oz. pkg. pitted dates, chopped | ||
| Butter/Margarine | 1/4 Cup (16 tbs) | |
| Orange juice | 1/4 Cup (16 tbs) | |
| Egg | 1 , beaten | |
| Milk | 1 Tablespoon | |
| Peanuts | 1/3 Cup (16 tbs), chopped | |
| Vanilla | 1/2 Teaspoon | |
| 2 cups flaked whole grain corn cereal | ||
| Peanuts | 1/2 Cup (16 tbs), finely chopped | |
Directions
In a 2-quart saucepan combine dates, butter or margarine, and orange juice.
Cook and stir over medium heat till butter is melted and mixture is well mixed.
Combine egg and milk.
Stir egg mixture into date mixture; cook and stir over medium heat for 1 or 2 minutes or till very thick.
Remove from heat; stir in the 1/2 cup peanuts and vanilla till mixture is smooth.
Stir in cereal.
Roll mixture into 3/4-inch balls; roll in finely chopped peanuts.
Chill till firm.
Makes 42 date balls.
