Peanut Crunch Cookies Recipe
Ingredients
| Butter | 3/4 Cup (16 tbs) | |
| Icing Sugar | 3/4 Cup (16 tbs) | |
| Well packed brown sugar- 3/4 cup brown sugar, well packed | ||
| Egg- 1 no, slightly beaten | ||
| Crunchy peanut butter- 3/4 cup | ||
| Vanilla extract | 1 Teaspoon | |
| Refined flour | 1 3/4 Cup (16 tbs) | |
| Baking soda | 1/2 Teaspoon | |
| Salt | 1/2 Teaspoon | |
| Granulated sugar for rolling | ||
Directions
GETTING READY
1. Preheat an oven to 187.5C (375F).
2. In a small bowl, break egg and beat lightly using a fork. Keep aside.
3. In a medium sized bowl, combine all the dry ingredients. Sieve and keep aside.
MAKING
4. In a medium sized bowl, add fat/ shortening and cream/ mix using a wooden spoon till smooth.
5. Gradually add icing sugar and brown sugar and beat well till well combined.
6. Add vanilla extract, beaten egg and peanut butter.
7. Using an electric beater or wooden spoon, beat mixture till light in texture.
8. Add remaining sieved ingredients and mix to form cookie dough.
9. Shape into lemon sized balls and roll them in granulated sugar.
10. Place on baking tray, ensuring you keep 2 inch distance between each.
11. Bake in pre heated oven for 12 to 15 minutes, or till pale golden brown in colour.
12. Makes 5 dozen cookies.
