Peanut Cookies Recipe
Ingredients
| Butter | 8 Tablespoon, softened | |
| Firmly packed brown sugar | 1 1/2 Cup (16 tbs) | |
| Egg | 1 Large | |
| Vanilla extract | 1 Teaspoon | |
| All purpose flour | 1 1/2 Cup (16 tbs) | |
| Baking soda | 1/2 Teaspoon | |
| Salt | 1/2 Teaspoon | |
| Peanuts | 1 Cup (16 tbs), finely chopped | |
| Semi-sweet chocolate | 6 Ounce, chopped |
Directions
Beat the butter and sugar in a large bowl until the mixture is light and creamy.
Stir in the egg and the vanilla.
Sift together the flour, baking soda and salt.
Fold the dry ingredients into the batter.
Stir in the peanuts and chill the batter for 1 hour.
Heat the oven to 375 degrees.
Lightly butter 2 baking sheets.
Drop the batter onto the baking sheets in teaspoon-fuls, about 1 1/2 inches apart.
Bake for 8 minutes, until the cookies are lightly browned.
Cool on wire racks.
Melt the chopped chocolate in the top of a double boiler over hot water, or in a microwave oven.
Drizzle the melted chocolate over the cookies when they have cooled completely.
