Peanut Butter Soup Recipe

2 tablespoons butter
 
2 tablespoons unbleached flour
 
4 cups milk
 
3/4 cup chopped onion
 
2 tablespoons freshly grated Parmesan cheese
 
1/4 teaspoon celery seed
 
1/2 teaspoon salt
 
1/4 teaspoon black pepper
 
1 bay leaf, crumbled
 
1/3 cup smooth peanut butter
 
Crisp bacon bits or chopped roasted peanuts

Directions

Melt butter until bubbly, sprinkle with flour and cook, stirring, 3 minutes.
Gradually add milk; cook and stir until smooth and slightly thickened.
Add onion, cheese, seasonings, bay leaf and peanut butter.
Cover, bring to boil and simmer 15 minutes.
Strain and adjust seasonings.
Garnish with bacon bits.
