 Firmly packed brown sugar1/2 Cup (16 tbs)
 Unsalted margarine - 1/2 cup, softened
 Peanut butter1/2 Cup (16 tbs)
 Egg substitute or egg - 1/4 cup or 1 whole
 Oat flour1 1/2 Cup (16 tbs)
 All-purpose flour - 1 cup
 Baking soda1/2 Teaspoon
 Baking powder1/2 Teaspoon
 Strawberry or raspberry preserves - 1/3 cup

Directions

GETTING READY
1) Heat oven to 350°F.

MAKING
2) Take a mixing bowl and combine oat flour, all-purpose flour, baking soda and baking powder.
3) In another bowl combine brown sugar, margarine, peanut butter and egg or egg substitute. Blend well.
4) Add the liquid to the dry ingredients and form crumbly dough.
5) Roll dough into 1-inch balls and place on an ungreased cookie sheet. Flatten each ball slightly to form an indentation with thumb or back of 1/4 measuring teaspoon.
6) Fill each indentation with about 1/4 teaspoon preserves. Bake for 12 to 14 minutes or until light golden brown.

SERVING
7) Serve with milk, if desired.
