Peanut Butter Fingers Recipe

Ingredients
1 cup flour
1/4 tsp baking soda
1 1/2 tsp baking powder
1/4 tsp salt
1/2 cup solid shortening, soft
1/2 cup peanut butter
2 tsp orange rind, grated
2 tsp granulated brown sugar replacement
1 tsp granulated sugar replacement
1 egg
Directions
Sift together flour, baking soda, baking powder and salt.
Beat shortening and peanut butter until creamy.
Add orange rind, sugar replacements and egg to creamed mixture; beat until light and fluffy.
Add flour mixture, stirring to blend well.
Shape level table-spoonfuls into 2 in. (5 cm) fingers and place on ungreased cookie sheet.
Bake at 350°F (175°C) for 12 to 15 minutes.
