Directions

Beat the butter in a large bowl until smooth.
Add the sugar, honey, peanut butter and egg and beat until well combined.
Sift together the flour, baking powder and salt and stir into the peanut butter mixture.
Divide the dough in half.
Set each portion on wax paper and shape into flattened rolls about 10 inches long, 2 1/2 inches wide and 1 1/2 inches high.
Wrap well and chill for several hours, or up to 3 days.
Heat the oven to 400 degrees.
Lightly butter 2 baking sheets.
Remove the dough from the refrigerator, and cut into 1/4-inch-thick slices, using a sharp, heavy knife.
Put the slices on the baking sheets and bake for 8 to 10 minutes, until the cookies are an even, light brown color.
Cool the cookies on wire racks.
