Peaked Pineapple Salad Recipe
Peaked pineapple salad is a mixed fruit and date salad made with added nuts. Dressed with whipped cream and a hint of lemon juice to taste, the peaked pineapple salad is served on lettuce bed with pineapple slices on it.
Ingredients
| Melon balls | 2 Cup (16 tbs) | |
| Pitted dates | 1 Cup (16 tbs), sliced | |
| Bananas | 2 Medium, peeled | |
| 1/4 cup chopped macadamia nuts or chopped toasted almonds | ||
| Whipping cream | 1 Cup (16 tbs) | |
| Sugar | 2 Tablespoon | |
| Lemon juice | 1 Tablespoon | |
| Salt | 1 Dash | |
| Can | 1 20 1/2 Ounce, chilled | |
Directions
Combine melon balls, dates, bananas, and nuts.
Whip cream with sugar, lemon juice, and salt till soft peaks form.
Fold into fruit mixture.
Top each lettuce-lined plate with one pineapple slice; pile fruit mixture over.
