Ingredients

 1 env. Unflavored gelatin
 Buttermilk1 1/4 Cup (16 tbs)
 Lemon juice1 Tablespoon
 Sugar1/2 Cup (16 tbs)
 Almond extract3/4 Teaspoon
 Yellow food coloring
 Peaches3 , sliced

Directions

Soften gelatin in 1/4 cup cold water in saucepan.
Place over low heat; stir until gelatin is dissolved.
Remove from heat; add buttermilk, lemon juice, sugar, almond extract and several drops of food coloring.
Chill until mixture is consistency of un- beaten egg whites.
Layer gelatin mixture and peaches in 3 tall glasses, using about 2/3 cup gelatin mixture in each glass.
Chill until firm.
3 servings.
