Peachy Oatmeal Muffins Recipe
This sweet and peachy oatmeal muffin is filled with the goodness of oats along with wheat flour. Baked with buttermilk, rolled oats and fresh bits of peaches, this recipe is light and flavorful. It is tinged with just a little cinnamon and orange zest for extra flavor.
Ingredients
| 2 cups whole-wheat flour 500 mL | ||
| Rolled oats | 1 Cup (16 tbs) | |
| 1/2 cup unprocessed wheat bran 125 mL | ||
| Packed brown sugar | 1/2 Cup (16 tbs) | |
| 11/2 tsp baking soda 7mL | ||
| 1 tsp salt 5mL | ||
| Eggs | 2 | |
| Buttermilk | 11/2 Cup (16 tbs) | |
| Vegetable oil | 1/4 Cup (16 tbs) | |
| Orange zest | 3 Teaspoon | |
| 11/2 tsp cinnamon 7mL | ||
| Fresh peaches, finely chopped | ||
Directions
In a large bowl, combine flour, oats, wheat bran, sugar, baking soda and salt.
Make a well in the center.
In another bowl, whisk together eggs, buttermilk and oil.
Stir in zest and cinnamon.
Add to dry ingredients, stirring just until moistened.
Fold in peaches.
Spoon batter into prepared muffin tin, filling cups three-quarters full.
Bake in preheated oven for about 20 minutes.
VARIATIONS : You could replace peaches with 2 cups (500 mL) fresh chopped pears, plums or nectarines.
