Peachy Cheesecake Recipe

Ingredients
Graham cracker crumbs - 2/3 cup
Sugar - 5/8 cup
Butter - 1/4 cup, melted
Peach gelatin - 2 packages (3-oz. Each)
Lemon juice - 2 tbsp.
Cream cheese - 1 package ( 8-oz.)
Evaporated milk - 1 can, (6-oz.)Chilled
Sweetened peaches - 1 1/2 cup diced
Directions
MAKING
1. In a bowl combine crumbs and 2 tablespoons sugar, mixing well and stir in butter.
2. Into bottom of springform pan press crumb mixture.
3. Dissolve gelatin in 2 cups boiling water and stir 1 cup cold water and lemon juice into gelatin mixture.
4. Chill until partially set.
5. In a bowl blend remaining sugar and cream cheese until light and fluffy and beat in milk.
6. Whip gelatin mixture until light and fluffy and fold into cream cheese mixture.
7. Chill until partially set.
8. Drain peaches and fold into cheese mixture.
9. Pour into crust-lined pan chill until firm.
SERVING
10. Unmold to a serving plate and serve.
