Crust
 
3/4 cup flour
 
3 tbsp brown sugar
 
2 tbsp orange peel, grated
 
1/4 cup butter
 
1 egg yolk, beaten
 
Filling
 
3 1/2 cups canned peaches
 
2 cups cream cheese, softened
 
1/2 cup sugar
 
2 tbsp flour
 
4 eggs
 
1/2 cup peach juice
 
1 tsp vanilla extract
 
2/3 cup apricot glaze

Directions

Crust Butter bottom of a spring form cake pan.
Set aside.
In a bowl, mix flour, sugar and orange peel.
Add butter, mixing until granular.
Fold in egg yolk.
Press one third of crust over bottom of pan.
Wrap remainder, setting aside.
Bake bottom crust (without sides of pan) around 6 minutes or until golden brown.
Remove from oven.
Let cool.
Butter sides of pan.
Attach to bottom.
Line with crust, up to 2 inches (5 cm) from top.
Set aside.
Filling Reserve 3 peach halves for decoration.
Finely chop remainder.
In a large bowl, whip cheese until creamy.
In a second bowl, combine sugar and flour.
Fold into cheese.
Mix in eggs.
Fold in chopped peaches, peach juice and vanilla extract, whipping slightly.
Pour into pan.
Bake in oven 40-50 minutes.
Let cool 15 minutes.
Un mold.
Decorate cake with sliced peaches.
Cover with apricot glaze.
Refrigerate 3-6 hours.
