1 In a large, wide saucepan, add 1 1/2 cup water and dissolve the sugar in it over very low heat.
2 Add in cloves, cinnamon sticks and orange and lemon rind.
3 Carefully put the peaches in the mixture and simmer, uncovered, for 10 minutes.
4 Add the wine and continue simmering for 10 more minutes.
5 Make sure that the peaches do not turn mushy.Remove from the heat.
6 Using a slotted spoon,carefully lift the peaches out one by one.
7 Holding with a towel, carefully peel the peaches with your fingers and arrange on a serving dish.
8 Simmer the cooking juices until reduced to a light syrup.
9 Cool the syrup and pour over the peaches.
10 Chill in a refrigerator until ready to serve.
11 Serve chilled.
