Peach Yogurt Ice Recipe

2 (16-ounce) cans unsweetened sliced peaches, undrained
2 envelopes unflavored gelatin
2 (8-ounce) cartons vanilla low-fat yogurt
2 tablespoons dark rum Kiwi slices (optional)
Directions
Drain peaches, reserving liquid; set aside.
Soften gelatin in 1/3 cup reserved peach liquid; set aside.
Place remaining peach liquid in a small saucepan; bring to a boil.
Add gelatin mixture to boiling liquid; remove from heat, and stir until completely dissolved.
Set aside to cool.
Place peaches in container of electric blender, and process until smooth.
Add yogurt and rum; process until thoroughly blended.
Combine gelatin mixture and yogurt mixture; stir well.
Pour into a 9-inch square pan; freeze until firm, stirring several times during freezing process.
Let stand at room temperature 10 minutes before serving.
Garnish with kiwi, if desired.
