1 c. sugar 250 mL
 
2 Tbsp. corn syrup 30 mL
 
4 Tbsp. cornstarch 60 mL
 
1 c. water 250 mL
 
1 tsp. lemon juice 5 mL
 
4 Tbsp. peach jelly powder 60 mL
 
3-4 fresh ripe peaches 3-4
 
9" baked pie shell Whipped cream 23 cm

Directions

In a heavy saucepan combine the sugar, corn syrup, cornstarch, water and lemon juice.
Mix well and continue to stir over high heat until the mixture comes to a boil.
Reduce the heat and continue to cook and stir approximately 3 minutes longer.
Remove from the heat and stir in the jelly powder.
Cool this mixture to lukewarm.
Quickly peel and slice the peaches and add to the cooled sauce; mix gently but thoroughly to coat all peach slices.
Transfer the filling to the baked pie shell.
Refrigerate at least 2-3 hours before serving.
Garnish with whipped cream.
