love fresh peaches. I had some ripe peaches that were just right for this recipe.Actually this experiment turned out really good. I was visiting a friend and I told her I would bring something for dessert since she was providing the meal. It turned out so good. I hope you enjoy this recipe as much as we did.

Ingredients

 4 large ripe peaches
 1 tbsp plus 1 tsp light butter
 Cashew nut3/4 Cup (16 tbs), crushed
 1/4 cup plus 2 tbsp Splenda brown sugar blend
 Vanilla1 Teaspoon
 Sprinkle of cinnamon

Directions

1.In medium saucepan melt 1 tbsp of butter.Add granola clusters
(crushed),vanilla extract and brown sugar. Cook on low heat until
sugar melts and coats granola.

2. Cut the top off of the peaches, and scoop out center
slightly to remove seed. Spoon granola mixture inside
peach and pack down. Sprinkle with cinnamon. Bake at 325
for 20 minutes until top is slightly brown.

3.Melt remaining tsp of butter and 2 tbsp of brown sugar and stir for 1
minute. Remove from heat. Pour brown sugar glaze over peaches. Serves 4
