Peach Melba Parfaits Recipe

Ingredients
| Low fat vanilla ice cream | 4 Cup (64 tbs), softened | |
| Peeled mashed peaches | 3⁄4 Pound (1 Cup) | |
| Amaretto | 1 Tablespoon, flavored (Almond-Flavored Liqueur) | |
| Vanilla extract | 1 Teaspoon | |
| Frozen unsweetened raspberries | 12 Ounce, thawed and undrained | |
| Sugar | 3 Tablespoon | |
| Grand marnier | 1 Tablespoon (Orange-Flavored Liqueur) | |
| Raspberries | 1 1⁄2 Cup (24 tbs) | |
| Peach slices | 8 |
Directions
Combine first 4 ingredients in a freezer-safe container; stir well.
Cover and freeze until firm.
Place thawed raspberries, sugar, and Grand Marnier in a blender; process until smooth.
Strain mixture through a sieve into a bowl; dis card seeds.
Cover raspberry puree; chill.
Spoon 2 teaspoons raspberry puree into each of 8 parfait glasses or champagne flutes.
Top each with about 1 1/2 tablespoons raspberries and 1/4 cup ice cream mixture.
Repeat layers, ending with 2 teaspoons raspberry puree.
Garnish with peach slices, if desired.
