Peach Melba Cake Squares Recipe
Who could even think peaches and raspberries can whipe up such a wonderfil combination until they have tasted this Peach Melba Cake Squares! I call it a truly wonderful piece of cake with frozen red raspberries and peach halves in it and made even better with a wonderful combination of current jelly and sugar! Ingredients
1 package (10 ounce) frozen red raspberries, partially frozen
1/2 cup currant jelly
1/4 cup sugar
1 tablespoon cornstarch
2 tablespoons water
6 thick slices (3/4 inch) pound cake
6 large well drained canned peach halves
Directions
Combine and heat first 3 ingredients in metal fondue pot over moderate direct heat.
Mix cornstarch and water until free of lumps.
Stir into fruit mixture and cook, stirring constantly, until mixture thickens.
Top each cake slice with a peach half, cavity side up.
