Ingredients
1 can (1 pound 14 ounces) pitted black
Bing cherries
1 tablespoon sugar
1 tablespoon cornstarch
1 cup cherry juice
1 3 inch piece lemon peel
2 tablespoons cherry liqueur
6 canned cling peach halves
1 pint vanilla ice cream
1/3 cup warmed brandy
Directions
Drain cherries and reserve juice.
Mix sugar with cornstarch and add 1 cup cherry juice a little at a time.
Add the lemon peel and cook gently, until clear and thickened, about 5 minutes.
Remove from heat.
Take out the lemon peel and stir in the cherry liqueur and the cherries.
This may be prepared ahead.
To serve: Have the dessert dishes ready on a tray at the table.
Place a peach half and some ice cream in each.
Transfer the sauce to an electric wok and heat gently.
Pour the warm brandy over the hot sauce, without stirring.
Set ablaze and spoon over the peaches and ice cream.
