Peach Cobbler Recipe

Ingredients
3 cups sliced fresh peaches
Butter or margarine to grease baking pan
1 cup sugar
1 tablespoon lemon juice
1 teaspoon grated lemon rind
1/4 teaspoon almond extract
1 1/2 cups sifted flour
3 teaspoons baking powder
1/2 teaspoon salt
3 tablespoons sugar.
1/3 cup shortening
1/2 cup milk
1 egg, well beaten
Directions
Place peaches in greased 8 inch baking pan.
Mix together 1 cup sugar, lemon juice and rind and almond extract.
Put over peaches.
Place pan in warm oven while preparing shortcake.
Sift together flour, baking powder, salt, and 1 tablespoon sugar.
Cut in shortening until mixture is crumbly.
Add milk and egg.
Mix until flour is just moistened.
Spread over hot peaches.
Sprinkle with 2 tablespoons sugar.
Bake in 400°F toaster oven 30 to 35 minutes.
