Peach Chutney Recipe
Ingredients
| Firm peaches - 10 cups, peeled and sliced | ||
| Walnuts – 1 cup, coarsely chopped | ||
| Pecans – 1 cup, coarsely chopped | ||
| Seedless raisins - 1 cup, coarsely chopped | ||
| Hot peppers - 6 – 8, coarsely chopped | ||
| Vinegar | 1 Cup (16 tbs) | |
| Sugar | 7 Cup (16 tbs) | |
| Ginger | 1 Tablespoon | |
| Salt | 3 Tablespoon | |
| Onion | 1 Cup (16 tbs), chopped | |
| Currants | 1 Cup (16 tbs) | |
| Lemons – 2, thinly sliced | ||
| Garlic | 5 Clove (5gm) | |
| Cloves | 1 Tablespoon | |
| Cinnamon | 1 Tablespoon | |
| Paprika | 1 Tablespoon | |
Directions
MAKING
1) Take a bowl and combine walnuts, peaches and pecans in it. Set aside.
2) Take large kettle and combine raisins, onion, currants, peppers, garlic, lemons, vinegar, spices and sugar in it. Bring the mixture to a boil.
3) Reduce heat and simmer for about 1 hour.
4) Add nuts and peaches.
5) Simmer for another 1 hour, stirring constantly.
SERVING
6) Transfer the chutney to sterilized jars. Seal and store.
