 4 quarts finely chopped, peeled peaches or pears
 Raisins1 Cup (16 tbs)
 Onions1 Cup (16 tbs), chopped
 Brown sugar2 Cup (16 tbs)
 Mustard seed1/4 Cup (16 tbs)
 Ginger2 Tablespoon
 Salt2 Teaspoon
 Garlic1 Clove (5gm), minced
 Hot red pepper1 To taste, finely chopped
 Vinegar5 Cup (16 tbs)

Directions

Combine all ingredients in a large sauce pot.
Cook slowly until thick, about 40 minutes.
Stir frequently to prevent sticking.
Pour hot into hot jars, leaving 1/4 inch head space.
Adjust caps.
Process 10 minutes in boiling water bath.
