Peach Melon Soup With Fresh Mint Recipe
Ingredients
| 4 large or 6 medium ripe peaches, peeled and sliced | ||
| 1 small cantaloupe, chunked (about 4 cups loosely packed) | ||
| Juice of 1 lime | ||
| 10 to 12 fresh mint leaves, finely minced | ||
| Additional mint sprigs for garnishing | ||
Directions
In a food processor or a blender in batches, puree the sliced peaches and cantaloupe chunks with the lime juice.
Stir in the minced mint.
Chill several hours to develop the flavor.
Serve in glass bowls; garnish each portion with mint sprigs.
