Peach Fantasy Recipe

Ingredients
Filling
5 tablespoons cornstarch
1/4 cup dry Sherry
2 tablespoons fresh lemon juice
6 large fresh peaches, peeled and sliced
1/4 cup sugar
1/2 teaspoon cinnamon
1/4 teaspoon almond extract
Dash of nutmeg
1/2 teaspoon grated lemon peel
Meringue
8 large egg whites
1/2 teaspoon cream of tartar
2 cups sugar
Chocolate
1 cup (6 ounces) chocolate chips
1/4 cup (1/2 stick) butter
1/4 cup vegetable shortening
6 to 12 fresh peach slices, dipped in fresh lemon juice
3 cups whipping cream
Directions
For filling: Place cornstarch in small bowl.
Add Sherry and lemon juice and stir until cornstarch is dissolved.
Place peaches in blender or processor and puree.
Pour into medium saucepan and blend in sugar, cinnamon, almond extract and nutmeg.
Stir in cornstarch mixture.
Cook over medium heat, stirring constantly until thickened and clear, about 5 minutes.
Remove peaches from heat and add lemon peel.
Cool, then refrigerate overnight.
For meringue: Cut out 6 waxed paper circles 8 inches in diameter.
Invert six 8- to 9-inch round cake pans and grease.
Place circle on each pan and grease.
Arrange oven racks in upper and lower thirds of oven.
Preheat oven to 250°F.
In large mixing bowl, beat egg whites and cream of tartar until foamy.
Gradually add sugar, a tablespoon at a time, and continue beating until stiff and glossy but not dry.
