4 cups sliced fresh peaches
2 tablespoons honey
1 egg, well beaten
1 tablespoon tapioca granules
1 cup whole wheat pastry flour
1 teaspoon soda
1/4 teaspoon salt
1 tablespoon butter, softened
1/3 cup buttermilk
Directions
Combine peaches, honey, egg, and tapioca.
Preheat oven to 425° F. and grease a 9-inch round baking dish.
Spread peach mixture evenly over bottom of baking dish.
Combine flour, soda, salt, butter, and buttermilk.
On a well-floured board, roll dough to 1/2-inch thickness.
Prick dough with a fork and place loosely over peaches.
Bake in preheated oven for 20 to 30 minutes.
