Peach And Orange Tea Bread Recipe
Ingredients
| 100g/4 oz dried peaches, soaked overnight | ||
| 100g/4 oz glace cherries | ||
| Grated rind and juice of 2 small oranges | ||
| 50 g/2 oz butter | ||
| 225g/8 oz self-raising flour | ||
| 75g/3 oz soft brown sugar | ||
| 100g/4oz raisins | ||
| Eggs | 2 | |
| Milk | 2 Tablespoon | |
Directions
Drain the peaches and chop with the cherries, using the double-bladed chopping knife.
Simmer the chopped fruit in the orange juice for 5 minutes.
Using the double-bladed chopping knife, mix the butter into the flour.
Add the remaining ingredients and mix well.
Place in a greased l-kg/2-lb loaf tin.
Bake in a moderate oven (180C, 350F, gas 4) for 1-1 1/4 hours.
Slice and spread with butter.
