Ingredients

 Vanilla pudding package1
 Lemon or orange rind jelly roll or sponge cake
 Jam
 1-2 sliced fresh peaches or 1 can (16 oz.) peaches
 1 or 2 fresh peaches
 Lemon juice
 1/2 cup heavy cream, lightly whipped
 Glace or fresh cherries

Directions

Make the pudding according to instructions on the package, but put thin strips of lemon or orange rind into the milk and remove when the vanilla pudding has thickened.
Arrange 6 slices of jelly roll or sponge cake, split and spread with jam, in a serving dish.
Top with the sliced fresh peaches or half of the drained canned peaches.
Spoon the hot pudding over the sponge and fruit and allow to cool.
Decorate with the thinly sliced fresh peaches (dipped in lemon juice) or the remainder of the canned fruit, the whipped cream and cherries.
