Pea and Carrot Croquettes Recipe
Ingredients
Carrots- 1 cup, mashed and cooked
Peas- 1 cup, cooked
Parsley- 1 teaspoon, minced
Thick White Sauce- 1 cup
Melted butter- 1 tablespoon
Salt and pepper- to taste
Crumbs and egg- as required
Directions
MAKING
1.In a bowl, combine carrots, peas, parsley, white sauce and butter, being careful not to mash peas
2.Season, cool and shape into croquettes
3.Now roll in crumbs, then in egg and again in crumbs
4.Last, fry in hot deep fat (380 F.) 3 to 5 minutes
SERVING
5.Serve with a sauce of your choice or with salads
