1 cup dried peas
1 sprig mint
1/2 teaspoon baking soda
1 sprig thyme
2 medium onions
1 leaf of sage or pinch of dried sage
1 large potato
1 tablespoon butter or bacon drippings
1 bay leaf
Salt and pepper
4 cups water or stock
1 teaspoon green vegetable dye
1 bunch parsley
Directions
Soak the peas overnight in 2.cups of boiling water and the soda.
Next day wash them to remove the soda.
Melt the sliced onions and potatoes in the fat.
Add peas and all other ingredients except the green dye.
Boil gently until peas are soft.
Remove herbs with a slotted spoon.
Add the green dye.
Sieve, and serve with cubes of bread that have been fried in bacon fat.
