Ingredients

 
3 cups (720 ml) chicken broth
 
3 cups (720 ml) vegetable broth or additional chicken broth
 
1 tbs (15 ml) soy sauce pinch ground red pepper (cayenne)
 
2-oz pkg (60 g) SNO PEAS, stringed and halved crosswise
 
2 cups (480 ml) spinach leaves, torn and stems removed
 
1 cup (240 ml)Tofu, drained and broken into chunks
 
1/2 cup (120 ml)Enoki Mushrooms
 
3 green onions, chopped
 
1 hard-cooked egg, chopped, optional

Directions

Heat broths in Dutch oven or 3-quart saucepan; add soy sauce and red pepper; simmer 2 minutes.
Add snow peas, spinach leaves and tofu chunks.
Cut off bottom 1/2 inch of enoki mushroom stems; add to soup with chopped onion.
Simmer 1 minute.
