Ingredients

 
2 pounds peapods
 
1 onion, peeled and sliced
 
2-3 sprigs mint
 
2-3 sprigs parsley
 
4 cups stock or 2 bouillon cubes and
 
4 cups water
 
2 tablespoons margarine
 
1 1/2 tablespoons flour
 
Sugar
 
4 tablespoons cooked green peas (optional)
 
Chopped mint

Directions

1. Wash the pods and put into a large kettle with the onion, mint, parsley, and stock. Bring to a boil, cover, and simmer for about 40 minutes.
2. When the outer flesh of the pods is tender, rub all through a sieve.
3. Melt the margarine in a pan, stir in the flour, and cook for 2 minutes. Add the puree and stir until boiling. Add salt, pepper, and sugar to taste.
4. Add peas, and serve sprinkled with a little chopped mint.
