This video shows how "Pav Bhaji", a very popular street food in India, is made. It has been shot at midnight at one of the food stalls (called "Chandan Laxmi Pav Bhaji and Fast Food") at Juhu Chowpatty Beach (the most famous among places selling Pav Bhaji) in Mumbai, India. Juhu is a suburb in Mumbai famous for its beach, the food stalls, Prithvi Theatre and ISKCon temple and also because it is home to some of the biggest Bollywood stars like Amitabh Bachchan, Hrithik Roshan and Aishwarya Rai. The video has no actual footage of the beach or the sea since it was dark and was raining heavily...had to save my camera! This is a first in a series of videos on Juhu which is a hot favourite destination with every tourist visiting Mumbai.Ingredients
How to make Pav Bhaji
The recipe given here is more in-house cooking friendly whereas the video is a little different and depicts the way Pav Bhaji is made in stalls.FOR BHAJI :
Clean and cut the vegetables. Pressure cook them (except tomatoes). Peel the potatoes. Drain the vegetables and keep aside.
Finely chop the onions and tomatoes.
Heat a pan. Add oil and heat till smoky. Add asafetida (optional) and stir. Add chopped onion and sauté until it turns light golden brown. Then add ginger-garlic paste. Fry for a while, then add tomatoes and cook till they become tender.
Sprinkle turmeric powder and stir. Add red chilly powder, salt and pav-bhaji masala and cook till the mixture acquires a rich, roasted colour.
Now add all the vegetables and start mashing. Keep mashing and stirring till the mixture becomes an inconsistent paste. Add chopped coriander leaves and squeeze one lemon. Again, mix and mash. Once the mixture becomes a mush and no ingredients are recognizable, add fenugreek leaves and mix well. The bhaji is ready.
(Important : You must keep mashing the vegetables all the while. Keep adding water from time to time to allow the mixture to cook and to prevent it from sticking to the pan)
FOR PAV :
Slit the pavs/buns horizontally. Heat 1 tbsp of butter. Add finely chopped coriander leaves, a pinch of red chilly powder and 1 tsp of pav bhaji masala. Saute for 15-20 secs. Roast the horizontally slit pavs/buns (8 in no.) in the pan so that they soak the butter and masala and become soft.
TO SERVE :
Garnish with chopped coriander leaves, onion and a lemon wedge. Add a blob of butter to the bhaji.

Hi Vikas, I must say that i was really delighted to have come across this video online, when i was just looking for that "street style" recipe of pav bhaji to make at home. I have made it several times at home, but never came out to be like the street style. Living in states, i definately miss all that yummy street food of india, but i do enjoy cooking at home. Actually I havent seen many of the fun things as I was always working. However, I always went shopping for leather items in Mumbai-great shoes, bags, and jackets. Many people don't realize many designer leather goods are made in Mumbai using Italian leather. They just tag them made in Italy, Made in Spain, and so on.
Laws in Europe aren't so strict as to tagging actual countries of origin. The US is much stricter. What is funny I have often seen items that say Made in Sweden (brass items) or Made in Italy or Made in Germany when actually a US company bought them from Sweden, or Italy or Spain....................only they were made in Moradabad at a fraction of the cost. When I'd see the boxes all stacked at factories in Moradabad with Made in Sweden I'd have a good laugh. It often happens in European goods. Not just in India but also in China, Thailand, Vietnam, etc.

Have to say this is one enticing video clip. Have tried this at home and works pretty well, but for the authentic taste of pav bhaji...the stalls at Juhu Beach in Mumbai get the votes. Great video Vikas.

thanks! yes, the actual cooking time is longer...takes about 15 mins cause bhaji requires a LOT of mashing...obviously couldn't keep the video that long...
