Paula'S Apple Cake Recipe

Paula's apple cake is a special apple cake made with lemon juice and sour cream. Filled with apples and baked with flour, eggs, sour cream and sugar, paula's apple cake is moist and rich in flavor.

 Sour cream1
 Baking powder3 Teaspoon
 Salt1 Pinch
 Butter1⁄2 Cup (8 tbs)
 White sugar3⁄4 Cup (12 tbs)
 Eggs3 , beaten
 Lemon1⁄2 , juiced
 Apples6 Medium
 All purpose flour1⁄2 Cup (8 tbs)
 All purpose flour1⁄2 Cup (8 tbs)
 Brown sugar1 Cup (16 tbs)
 Soft butter1⁄4 Cup (4 tbs)

Directions

Sift the first three ingredients together.
Cream butter and white sugar, then beat in eggs mixed with lemon juice.
Add sifted dry ingredients alternately with the 1 cup sour cream.
Batter is fairly stiff.
Spread in two greased 8 x 8 x 2 inch pans.
Core and cut unpeeled tart apples into about 8 wedges each.
Peel apples if skin is tough.
Press wedges core edge down into batter.
Space evenly.
Cover with sour cream about 3/4 to 1 cup.
Sprinkle with a mixture of the 1/2 cup flour, brown sugar, butter and pinch salt.
Bake at 350F for 30 to 35 minutes, then spread with more sour cream, about 2/3 cup and sprinkle with brown sugar.
Continue baking until knife slips out clean, about 50 minutes in all.
Serves 12 or more with cream.
