Patty'S Hamburger Soup Recipe
Patty's hamburger soup is a filling soup made with ground beef and vegetablescooked with consomme, and canned tomatoes, the hamburger soup is flavored with parsley and thyme. Served with bread, it makes a filling meal.
Ingredients
| Butter | 3 Tablespoon | |
| 1 med. onion, coarsely chopped | ||
| Ground beef | 1 1/2 Pound | |
| Tomatoes | 1 1 Pound | |
| 3 10 1/2-oz. cans consomme | ||
| Water | 2 Can (10oz) | |
| Carrots | 4 Medium, quartered | |
| Bay Leaf | 1 | |
| 4 celery tops, chopped | ||
| Parsley sprigs | 6 | |
| Thyme | 1/2 Teaspoon | |
| Salt | 1 Tablespoon | |
| Peppercorns | 10 | |
| Potatoes | 3 Medium | |
| Parmesan cheese | ||
Directions
Melt butter in soup kettle; toss in onion.
Cook onion until limp, but not brown.
Add ground beef; brown lightly.
Add tomatoes, consomme, water, carrots, bay leaf, celery tops, parsley, thyme, salt and peppercorns.
Add potatoes.
Cover; cook over low heat about 45 minutes.
Serve plain or with toast rounds covered with grated Parmesan cheese on top.
