Patra Bhajia Recipe
This Patra Bhajia is one of my favorite snacks ! A delicious colocasia leaves preparation, with an irresistibly seasoned gram flour batter stuffing, this leafy snack tastes good with savory tomato dip ! Just try this Patra Bhajia and let me know if you like it !
Ingredients
Large patra leaves or colocasia leaves 15 to 20
Gramflour or besan 1 cup
Ground cumin seeds 1 tsp
Tamarind extract or juice 1/2 cup
Turmeric powder 1 /2 tsp
Chilli powder 3 tsp
Powdered sugar 3 tsp
Oil 1 tbsp
Asafoetida 3 to 4 pinches
Salt according to taste
Ingredients for seasoning
Finely chopped coriander
leaves 1 tbsp
Finely grated coconut 1 tbsp
Mustard seeds 1/2 tsp
Cumin seeds 1/2 tsp
Sesame seeds 1 tsp
Oil 1 tbsp
Directions
First wash the patra leaves and wipe them clean.
Use a pair of scissors to cut the thick veins of the leaves.
Then use a rolling pin to roll them lightly and keep them aside for sometime.
Blend all the ingredients for preparation properly so that the mixture becomes a thick paste.
Take a leaf and place it on a flat surface with its reverse side facing up.
Next take a small amount of the thick paste and apply it all over the leaf surface, thinly and uniformly.
Put another leaf over it and repeat the process.
In this manner, make a set of 3 to 4 layered leaves, the uppermost layer being that of paste.
