1)In a mixing bowl, add flour, salt and cheese and cut in shortening.
2)Add water and blend lightly.
3)Shape pastry into 2 balls and place then between waxed paper.
4)Now, roll into two 10 1/4-inch circles.
5)Take a 9-inch pie plate and line it with one pastry circle.
6)Add Brussels sprouts filling.
7)Place the remaining pastry circle and pinch and flute edges.
8)Brush it with pastry with lightly beaten egg white, if desired.
9)Make five 1 1/2-inch slits on top pastry.
10)Bake at 425 degrees for 30 minutes or until pastry is golden brown.
11)Serve the pastry hot.
