Pastrami Part 2 Recipe Video
Here's my second attempt at smoking a store bought corned beef. It's seasoned with fresh ground coriander seeds and black pepper corns. It turned out really good but a little too salty. I think next time I will need to soak the corned beef over night to bring out some of the salt.
Ingredients
| Corn beef | 2 Pound | |
| Yellow mustard sauce | 3 Tablespoon | |
| For the rub: | ||
| Coriander seeds | 2 Tablespoon, ground | |
| Whole black peppercorns | 2 Tablespoon, ground | |
Directions
GETTING READY:
1)In a processor grind the dry rub and set aside.
2)Place the corn beef in a baking tray lined with foil. Apply the mustard to cover the whole slab of beef.
3)Apply the dry rub generously.
4)Get the smoker ready.
MAKING:
4)Place the tray in the smoker and let it cook for 4 hours.
SERVE:
5)Thinly slice the beef and serve on fresh loafs of bread or on your favorite sandwiches.
TIPS:
Use hickory and pecan wood chips for added aroma and flavor.
