Pasta With Tomato And Red Pepper Sauce Recipe
This pasta with tomato and hot pepper sauce is a peppy and spicy recipe that is goes great with a glass of wine. Cooked with garlic, onion and tomatoes along with sweet red peppers and cheese, the pasta with tomato and red pepper sauce is the perfect reciepe for a lazy summer afternoon lunch.
Ingredients
1 tbsp olive oil 15 mL
1 onion, chopped 1
2 cloves garlic, finely chopped 2
pinch hot red pepper flakes pinch
1 1/2 lb fresh tomatoes, peeled, seeded and 750 g chopped (6 to 8 plum tomatoes), or 1 28-oz/796 mL tin plum tomatoes, with juices, chopped
4 sweet red peppers, roasted, peeled and chopped 4
Salt and pepper to taste
1 lb pasta 500 g
1/4 cup grated Parmesan cheese, optional 50 mL
1/4 cup shredded fresh basil 50 mL or chopped parsley
Directions
Heat oil in large, deep non-stick skillet.
Add onion, garlic and hot pepper flakes.
Cook gently until tender and fragrant.
Add tomatoes and peppers.
Cook until tomatoes cook down and become juice, about 5 to 10 minutes.
Add salt and pepper to taste.
Meanwhile, bring large pot of water to boil.
Add pasta and cook until tender but firm.
Drain well and add to skillet with sauce.
Toss well with cheese and basil.
Taste and adjust seasonings if necessary.
