Ingredients
9 ounces uncooked thin-strand pasta
1 cup thinly sliced white onion (about 1 medium onion)
1 tablespoon water
1 tablespoon coarsely chopped garlic(about 3 cloves)
4 ounces red bell pepper, peeled and thinly sliced
4 ounces Chinese pea pods
3 ounces skinless smoked chicken breast thinly sliced
1/4 cup shredded fresh basil
1/8 teaspoon salt
1/8 teaspoon fresbly ground black pepper
1 cup 99% Fat-Free Chicken Stock
Directions
Cook the pasta in a large pot of boiling water over high heat to desired tenderness (3 minutes for homemade or other fresh pasta, 8 to 10 minutes for dry).
Drain and set aside.
Combine the onion and water in a nonstick frying pan.
Cook for about 4 minutes over medium low heat, shaking the pan a little, until the onion is wilted.
Add the garlic, bell pepper, and pea pods.
Cover and cook for 2 minutes.
Add the chicken and seasonings, cover, and cook for another 5 minutes.
While this mixture is cooking, return the pasta to the pot and add the chicken stock.
Cook over medium low to medium heat, stirring, until most of the stock has been absorbed.
Turn off the heat, add the chicken mixture, toss, and serve.
