Pasta With Red Lentils In Spicy Tomato Sauce Recipe

Ingredients

 
2 cups water
 
1/2 cup dry red lentils sorted and rinsed
 
1 bay leaf
 
1 can (28 ounces) plum tomatoes drained
 
1 teaspoon olive oil
 
1 clove garlic, minced
 
1/2 teaspoon red pepper flakes
 
2 cups macaroni or ditalini
 
2 tablespoons shredded reduced fat
 
Cheddar cheese

Directions

In a 2 quart saucepan over high heat, bring the water to a boil.
Add the lentils and bay leaf.
Reduce the heat to medium and cook, stirring occasionally, for 15 minutes, or until the lentils are tender but not mushy.
Drain.
Remove and discard the bay leaf.
While the lentils are cooking, place the tomatoes in a large nonstick skil let and coarsely break them up with a spoon.
Add the oil, garlic, and pepper flakes.
Cook over medium heat, stirring frequendy, for 5 minutes, or until most of the moisture from the tomatoes has evaporated.
Stir in the lentils.
Also while the lentils are cooking, cook the pasta in a large pot of boiling water for 8 minutes, or until just tender.
Drain and add to the skillet with the lentils.
Sprinkle with the Cheddar.
