Pasta Salad Surprise Recipe
Ingredients
| 1/2 broccoli, cooked or raw, in small bouquets | ||
| 250 mL 1 cup peas, frozen or canned | ||
| Tomatoes | 3 , diced (Salad) | |
| 1 green or red pepper, diced | ||
| Green onions | 3 , chopped (Salad) | |
| 10-12 black olives, coarsely chopped | ||
| 4 barbecue chicken sausages, cooked, cut into pieces | ||
| 400 g 14 oz pasta shells, cooked | ||
| Hard-boiled eggs | 3 , hardboiled (Salad) | |
| 25 mL 2 tbsp fresh parsley, chopped, to taste | ||
| Vinaigrette | ||
| 50 mL 1/4 cup honey | ||
| 50 mL 1/4 cup lemon juice | ||
| 10 mL 2 tsp fruit vinegar or other | ||
| 5 mL 1 tsp dried mustard | ||
| 50 mL 1/4 cup corn oil | ||
Directions
Combine the vegetables, sausages and pasta in a bowl.
Set aside.
Combine the ingredients, toss the vinaigrette and mix well.
Pour the vinaigrette into the bowl, stirring delicately.
Arrange on cold plates.
Garnish with egg slices.
Sprinkle with parsley.
