Pasta Salad A La Capri Recipe

Ingredients
4 large tomatoes
3 tbsp (50 mL) fresh basil leaves or
2 tsp (10 mL) basil leaves, dried
2 garlic cloves, chopped fine
1/2 tsp (2 mL) sugar
Salt and pepper to taste
A few spoonfuls of olive oil
1 lb (500 g) vermicelli
1 cup (250 mL) cheese grated
Directions
Peel and dice the tomatoes into 1/2-inch (1.25 cm) pieces.
Place in a bowl and add the basil, garlic, sugar, salt and pepper.
Mix gently, add the olive oil.
Leave on kitchen counter to marinate for 1 to 2 hours.
The flavors will mix and juice will form.
When ready to serve, cook vermicelli according to Pasta Cooking Chart.
Drain well.
Pour into a serving bowl and add the tomato mixture, stir to mix.
Top with the grated cheese.
Serve cooked vermicelli as soon as ready.
