Pasta Pine Nut Salad Recipe
Pasta Pine Nut Salad is a delicious salad version. An easy to make salad recipe, you will simply find this recipe both mouth-watering and amazingly tempting.
Ingredients
4 ounces fusilli
2 cups broccoli flowerets
1 medium-size green pepper, seeded and cut into julienne strips
14 cup chopped green onion
3 ounces mozzarella cheese, cut into
2- x 1/4-inch strips
1/3 cup reduced-alorie Italian salad dressing
1/4 cup white wine vinegar
2 tablespoons grated Parmesan cheese
3/4 teaspoon dried whole basil or 1 tablespoon minced fresh basil
1 clove garlic, minced
8 leaves curly leaf lettuce
2 tablespoons pine nuts, toasted
Directions
Cook pasta according to package directions, omitting salt.
Drain and let cool.
Cook broccoli in a vegetable steamer over boiling water 7 minutes or until crisp render.
Drain and let cool.
Combine pasta, broccoli, green pepper, green onion, and mozzarella in a large bowl.
Combine salad dressing, vinegar, Parmesan, basil, and garlic in a small bowl, stirring well.
Pour over pasta mixture; toss gently.
Cover and chill 8 hours or overnight.
To serve, spoon mixture onto a lettuce-lined plotter or bowl with a slotted spoon.
Sprinkle with pine nuts.
