Ingredients

 
2 tablespoons olive oil
 
1 cup chopped onion
 
1 garlic clove, pressed
 
1 can tomatoes, undrained, cut up
 
1 tablespoon minced fresh parsley
 
1 teaspoon salt
 
1/4 teaspoon black pepper
 
1/8 teaspoon dried rosemary, crushed
 
1 can red or white kidney beans, undrained
 
1 cup elbow macaroni, uncooked
 
Grated Romano or Parmesan cheese to taste

Directions

Heat oil in a large skillet.
Saute onion and garlic in oil until onion is golden.
Add tomatoes with liquid, parsley, salt, pepper and rosemary.
Bring to a boil.
Reduce heat and simmer 5 minutes.
Add beans with liquid and uncooked macaroni.
Bring to a boil.
Reduce heat and simmer 5 minutes longer until macaroni is tender but firm.
Sprinkle with Romano or Parmesan cheese.
Makes 4 servings.
