 Olive oil1 Tablespoon
 1 medium garlic clove, chopped fine
 1 small onion, chopped fine
 3/4 pound light-style ham, cut into 1/2-inch chunks
 Chicken broth1 1/2 Cup (16 tbs), reduced
 3/4 cup rinsed and drained canned black-eyed peas
 Chives2 Tablespoon, chopped
 Parsley1 Tablespoon, finely chopped
 1 pound pasta, cooked and drained

Directions

In a large saucepan, heat the oil with the garlic and onion over moderate heat.
When they sizzle, add the ham and saute just until it begins to brown, about 5 minutes.
Add the broth and the black-eyed peas and simmer just until the peas are heated through, about 3 minutes more.
Stir in the chives and parsley and ladle over cooked pasta.
